Our lemon-yoghurt cake offers a harmonious blend of tangy lemon zest, creamy yoghurt, and the richness of olive oil. Recipe: Lemon-Yoghurt Cake

Here's our tried and tested recipe for preparing a delectable lemon-yoghurt cake:

  1. Ingredients:
    • 1 ½ cups all-purpose flour
    • 1 cup plain Greek yoghurt
    • ½ cup extra virgin olive oil
    • 1 cup granulated sugar
    • 3 large eggs
    • 2 lemons (zest and juice)
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • A pinch of salt
  2. Instructions:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a separate bowl, combine the olive oil, sugar, eggs, Greek yoghurt, lemon juice, and lemon zest.
    • Add the dry ingredient mixture to the wet ingredients and gently fold until just combined.
    • Pour the batter into a greased cake pan.
    • Bake for approximately 35-40 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool before serving, and enjoy!
